Thinly slice the onions and bell peppers.
Heat a skillet to medium temperature with a light coat of oil. Cook the onions and bell peppers on medium heat for about 10 minutes or until they have reduced and reach a caramelized color, stirring every 3-4 minutes.
Set onions and peppers aside and add another light coat of oil to the skillet. On medium heat, crumble the Impossible⢠beef into the skillet. Cook for about 5-10 minutes or until the meet has almost completely turned brown, stirring every 2-3 minutes.
Add the Onions and peppers back into the skillet. Turn the skillet to low.
Heat 8oz water with 8oz of your favorite Vegan cheddar cheese to a sauce pan on medium heat. Wait for the cheese to melt completely, stirring more frequently as the cheese melts.
Add the Impossible beef, onions, and peppers into the four baguette rolls. Top each sandwich with the melted cheese sauce.
